Barn Doors and Parade Homes= Home Run!!!!!

I first fell in love with this beauty from Whisper Creek Cottage....ooooohhhh yeah!!!

Dump Chili

Very easy and fast

Bag of frozen pre-cooked Ground Beef (you cooked it up and froze it right?)
Can of any bean of your choice:
I used:
1 can Kidney
1 can Navy
1 can Corn
1 qt bottle of stewed Tomatoes
1 sm can diced gr. Chilies

Dump it all in a pan and season with taco seasoning or chili pdr or cumin or italian seasonings. Cook for 10 minutes to blend the flavors and serve it up with shredded pepperjack or cheddar, and tortilla chips or corn bread.  Saltines are good too!!

French Fries


For Breakfast..... It just changes everything for that picky eater who won't eat hashbrowns.
Take your favorite potato
slice it up
spray with olive oil
sprinkle with: Seasoned Salt, Chili Pdr, Garlic Pdr....what ever
Bake at 350 for 20-25 mins.

May use: Craisins (or raisins, or dates)
Blueberries
Sliced almonds
Mandarine oranges

Pita Pizza



This is a great alternative to pizza, I got it from The Friend magazine.

Pitas
Spaghetti sauce
Pepperoni
Shredded cheese
Stuff it in the pitas and put in the oven for 350*
KID APPROVED!!!!

Cookin Chicken


I cooked my 5 lbs of chicken in a crock pot, and I thought it was a great idea....it was, but the chicken is too flaky. I'm sure it would still turn out good, I'll just not put it in as long next time.

Another great way I save on time is cooking all of my ground beef...just get a big ol' pot (maybe a crock pot would work) and cook it all up. Then get out your sandwich bags and fill 'em up with your cooked ground beef or chicken and put it in the freezer and you're good to go!!!!

Food Storage Friday/ Bacon Blueberry Scones



This is a great alternative to muffins.

2 cups all-purpose flour (or whole wheat)
2 T sugar
2 tsp baking pdr
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp gr. cinnamon
1/3 C cold butter
3/4 C buttermilk
1 T vegetable oil
1 C fresh or frozen blueberries (or dried)
4 bacon strips, cooked and crumbled (I didn't use bacon)

1 egg & 1 T milk mixed to brush over scones before baking

Combine first 6 ingredients. Cut in butter until it resembles coarse crumbs. In a separate bowl, whisk buttermilk and oil, and add it to the crumb mixture. Stir in blueberries and bacon.

Turn onto a floured surface: knead 10 times. Pat into an 8-in. circle. Cut into 8 wedges. Separate wedges and place on a greased baking sheet.

In a small bowl, beat egg and milk, brush over scones. Bake at 425 for 12-15 min. or until golden brown. Serve warm!!

It seemed a bit dry so I put applesauce over the top.
