A place to store pantry items or use as a bread making center, just leave your Bosch or Kitchenaide there with your wheat grinder, along with all your ingredients and you're set!!!  Then close it all up when you're done!!  If only...

Food Storage Friday/ Baked Fruity Oatmeal


From Taste of Home:

3 C quick-cooking oats (regular works fine)
1 C packed brown sugar
2 teaspoons baking pdr
1 t salt
1/2 t ground cinnamon
2 eggs, lightly beaten
1 C milk (I used 1/8 C powdered w/ 1 C water)
1 cube butter (I used a 1/2 cube, you could omit it completely and it would be fine.)
3/4 C chopped peeled tart apple (I used dried apples)
1/3 chopped fresh or frozen peaches (I used canned, add even more peaches)
1/3 C fresh or frozen blueberries (used raspberries and boysenberries)
Additional milk, optional...I highly suggest it.

Combine all the dry and add the wet. Pour in a greased 8 inch sq. baking dish, uncovered, at 350* for 35-40 mins. or in the microwave for 15-20 mins, or until the center is firm. Put it in a bowl and serve with milk, I added a bit of nutmeg to the top.....yum. yeilds 9 servings.

Meal Planning

I have avoided it long enough....meal planning, uuuggh.  I know I have a bad attitude, but when I have planned, oh my, it was a wonderful week.  So one of my New Year's Resolutions is to write up 15 meal plans.  They will be from my food storage.  Then I will use part of the 15 in my weekly planning menu.

Spinach Dip (cold)

1 pkg (4.6oz) Mc Cormick Vegetable Dip seasoning mix
(may use Knorr, it's 1.4oz so add more of everything)
3/4 of a 10 oz bag of spinach or to taste (may use frozen)
1 (8oz) can water chestnuts, chopped
3-4 small green onions, diced (to taste)
1 to 1 1/2 cups of sour cream

Combine all ingredients and mix well. Enjoy with veggies or we like wheat thins...reduced fat of course.

Layer your plate pretty much in this order:

Rice- abt 1 cup per person
Chicken Sauce (recipe follows)
shredded cheese
shredded sweetened coconut
craisins
pineapple tidbits
chopped green onions
diced celery
sunflower seeds
diced red and/or green bell pepper
garbonzo beans (are good)
chinese noodles
pepper

Chicken Sauce:
2 cans Cream of Chicken Soup
fill one of the cans with milk
add it to the soup
may add 1/2 cup of sour cream (yummier and of course more fatty)
add cooked shredded or cubed chicken to it

In my attempt at getting organized, I created this blog to manage one of the most difficult, and nagging things in my life....feeding 8 people 3 times a day, some days with lunch others without, and some snacks in between. So here are some of my favorite recipies that my family likes, and hopefully we'll try out some new stuff too.
